A mainstay on many menus, Caprese Salads (or Insalata Caprese), are a delicious, easy way to use up all those tomatoes hanging heavy on the vines.
1 large tomato
small handful fresh basil leaves
Slice the tomato and fresh mozzarella. Arrange it on a plate with the fresh basil leaves. Purists will insist that you drizzle it with olive oil, but I like Italian dressing; it’s a bit more flavorful. You could also do an olive oil with balsamic vinegar drizzle, add thinly sliced onions, or your choice of salty olives. There’s no need to stick to hard and fast tradition here. The deviations can be pretty delicious.
